Mango Mastani

A chilled mango treat that brings together fresh mango purée, creamy mango milkshake and a scoop of homemade mango ice cream. Fruity, smooth and refreshing, this Mango Mastani works beautifully as both a drink and a dessert in one glass.

Ingredients

  • Mango – 300 g
  • Milk – 400 g
  • Whipped cream – 100 g
  • Sweetener – to taste

Method

1. Prepare the Mango Purée

Peel and dice the mangoes.

Add the diced mango to a blender and blend until smooth.

Divide the mango purée into two portions:

  • 150 g for the mango ice cream
  • 100 g for the mango milkshake

Keep the remaining mango aside for garnish.

2. Whip the Cream

Whip the cream on high speed until medium to stiff peaks form.

Keep aside.

3. Make the Mango Ice Cream

Take 150 g mango purée and add 50 ml milk and sweetener to taste.

Whisk together until smooth.

Add this mixture to the whipped cream and whisk again for a couple of minutes until well combined.

Transfer to a bowl and place in the freezer until set.

4. Make the Mango Milkshake

Take the remaining mango purée and add the remaining milk.

Add sweetener according to taste and blend until smooth and creamy.

5. Assemble

Pour the mango milkshake into the serving glass.

Top with a scoop of the homemade mango ice cream.

Garnish with a few fresh mango pieces and a cherry.

Serve chilled.

Ippitizer Note

Use ripe, naturally sweet mangoes for the best flavour. Chill the serving glass beforehand for an extra refreshing finish.
