Bharwan Paneer

A zero-oil paneer snack stuffed with fresh mint chutney, coated in a spiced yogurt marinade and grilled until lightly charred. The fresh chutney filling adds a sharp, herby contrast to the rich paneer, while onion, lemon and extra chutney complete the dish.

Ingredients

  • 150 g paneer
  • 25 g yogurt
  • Red chilli powder
  • Turmeric powder
  • Garam masala powder
  • Ginger paste
  • Garlic paste
  • Nigella seeds
  • Green chilli
  • Mint
  • Coriander leaves
  • Fresh ginger
  • Salt
  • Onion, for serving
  • Lemon, for serving

Method

  1. To make the mint chutney filling, wash and roughly chop the mint leaves, coriander leaves, green chilli and fresh ginger. Let them drain well, then add salt and blend to a smooth chutney.
  2. For the marinade, whisk together the yogurt, turmeric powder, red chilli powder, ginger paste, garlic paste, garam masala powder, salt and nigella seeds.
  3. Cut the paneer block in half lengthways and then into squares about ½ inch thick. Slit each paneer piece horizontally about three-quarters of the way through, taking care not to cut it completely.
  4. Place about a teaspoon of mint chutney inside each slit and spread it evenly. The chutney should remain inside the paneer but still be slightly visible from the side.
  5. Coat each stuffed paneer piece evenly with the yogurt marinade and leave it to marinate for a short while.
  6. Meanwhile, preheat the air fryer.
  7. Insert a skewer through the centre of each piece if desired. Place the paneer gently in the air fryer basket and grill at 180°C for 10 minutes, or until lightly charred at the edges. This can also be prepared in an oven.
  8. Serve hot with extra mint chutney and garnish with onion rings and lemon wedges.
