Fattoush Salad

Fresh, colourful and full of crunch, this Fattoush Salad combines crisp homemade pita chips with cucumber, tomato, radish, peppers, lettuce and pomegranate, all tossed in a tangy lemon-sumac dressing.

Ingredients

For the Pita Chips

  • Wheat flour – 20 g
  • Salt – to taste
  • Black pepper – to taste
  • Sumac – to taste

For the Salad

  • Cucumber – 25 g
  • Onion – 25 g
  • Pink radish – 25 g
  • Tomato – 25 g
  • Red bell pepper – 25 g
  • Capsicum – 25 g
  • Lettuce – 25 g
  • Pomegranate seeds – for garnish

For the Dressing

  • Olive oil – 10 g
  • Lemon juice – as required
  • Sumac – as required
  • Salt – to taste
  • Black pepper – to taste

Method

1. Prepare the Pita Chips

  1. Prepare the pita bread using the wheat flour.
  2. Bake until crisp but not browned.
  3. Cut the pita into bite-sized pieces.
  4. Transfer the pieces to the air fryer and cook briefly until golden and crisp, tossing frequently for even cooking.
  5. Season with salt, black pepper and sumac.
  6. Keep aside until needed.

2. Prepare the Salad

  1. Add the chopped lettuce, cucumber, onion, pink radish, tomato, red bell pepper and capsicum to a large mixing bowl.
  2. Season lightly with salt and black pepper.
  3. Toss gently to combine.

3. Make the Dressing

  1. In a small bowl, whisk together the lemon juice, olive oil and sumac.
  2. Adjust the salt and black pepper to taste.

4. Toss and Finish

  1. Pour the dressing over the salad and toss lightly.
  2. Add the crispy pita chips and toss once more.
  3. Transfer to a serving bowl or plate.
  4. Garnish with pomegranate seeds and extra sumac if desired.
  5. Serve immediately.

Ippitizer Note

This is one of my favourite salads because it is fresh, colourful and packed with texture. The crisp pita chips and tangy sumac-lemon dressing bring the whole bowl to life and make every bite vibrant and satisfying.

Tip

Add the pita chips only just before serving so they stay crisp and do not soften in the dressing.
