Ingredients

  • 100 g paneer
  • 250 ml milk
  • Sweetener, to taste
  • Cardamom powder
  • 5 g pistachios, chopped
  • 5 almonds, sliced

Method

  1. Place the paneer in a blender and blend until it forms a smooth paste. Alternatively, knead it thoroughly by hand until completely smooth. Set aside.
  2. Pour the milk into a saucepan and bring it to a boil.
  3. Reduce the heat and simmer until the milk has reduced to approximately half its original volume. Stir occasionally to prevent it from sticking to the bottom.
  4. Add the sweetener and cardamom powder. Mix well and cook for a few more minutes.
  5. Add the smooth paneer paste to the reduced milk.
  6. Cook over low heat, stirring continuously, until the mixture becomes thick and creamy.
  7. Transfer the Paneer Rabri to a serving bowl.
  8. Garnish with the chopped pistachios and sliced almonds.
  9. Serve warm or refrigerate and enjoy chilled.

Ippitizer’s Note

Blend or knead the paneer until completely smooth before adding it to the reduced milk. This is essential for creating a creamy rabri without visible paneer grains.

Tip

Keep the heat low after adding the paneer and stir continuously to prevent the mixture from sticking or becoming lumpy.
