Paneer Palak Bahar

A rich and comforting spinach gravy blended with almonds and topped with soft paneer cylinders. Finished with a light swirl of cream, this is a simple homestyle recipe with a distinctive Ippitizer presentation.

Ingredients

For the Palak Gravy

  • Spinach – 200 g
  • Almonds – 20 g
  • Butter – 10 g
  • Cream – 15 g
  • Ginger paste – as required
  • Garlic paste – as required
  • Garam masala – as required
  • Red chilli powder – as required
  • Jeera powder – as required
  • Dhaniya powder – as required
  • Black pepper – to taste
  • Salt – to taste
  • Lemon juice – as required

For the Paneer

  • Paneer – 100 g
  • Salt – to taste
  • Black pepper – to taste

Method

1. Prepare the Palak Base

  1. Add the spinach and almonds to a blender.
  2. Grind into a smooth paste and keep aside.

2. Cook the Gravy

  1. Heat a kadai and add the butter.
  2. Once the butter melts, add the ginger and garlic paste.
  3. Sauté for a couple of minutes.
  4. Add the spinach-almond paste and cook until it begins to boil.
  5. Add garam masala, red chilli powder, jeera powder, dhaniya powder, black pepper, salt and lemon juice.
  6. Continue cooking until the gravy thickens to your preferred consistency.

3. Prepare the Paneer

  1. Wrap the paneer in a kitchen towel and gently press to remove excess moisture.
  2. You can leave the paneer in cubes, or crumble and shape it as desired.
  3. For the Ippitizer presentation, shape the paneer into short cylinders.
  4. Season lightly with salt and black pepper.

4. Assemble

  1. Pour the palak gravy into the serving bowl.
  2. Arrange the paneer cylinders over the gravy.
  3. Finish with a light drizzle or swirl of cream.
  4. Serve warm.

Ippitizer Note

The presentation is what gives this version its identity. Instead of using standard paneer cubes, shaping the paneer into soft cylinders makes the dish feel more distinctive while keeping the flavours familiar and comforting.

Tip

Do not over-handle or overcook the paneer after shaping. Keeping it soft helps it stay tender against the rich palak gravy.
