Chocolate Mousse

A smooth, airy chocolate mousse made with chilled cream, dark cocoa and sweetener. Finished with pieces of homemade chocolate fudge, it is a simple single-serving dessert ready with very little preparation.

Ingredients

  • 50 g chilled whipping cream
  • Dark cocoa powder, to taste
  • A few drops of vanilla essence
  • Sweetener, to taste
  • 2 small pieces homemade chocolate fudge, roughly chopped

Method

  1. Place the chilled whipping cream in a cold mixing bowl.
  2. Beat until the cream begins to thicken.
  3. Add the dark cocoa powder, vanilla essence and sweetener.
  4. Continue beating just until the mixture becomes smooth and holds soft-to-medium peaks. Do not overwhip it.
  5. Spoon the mousse into a small serving glass and smooth the surface.
  6. Refrigerate for at least 30 minutes.
  7. Top with the chopped homemade chocolate fudge and serve chilled.

Ippitizer’s note

Keep the cream, bowl and beaters well chilled for the best texture. Stop beating as soon as the mousse holds its shape—overwhipping can make it grainy.

Tip

Sift the cocoa powder before adding it to the cream. This prevents small lumps and gives the mousse a smoother finish.
