Butter & Black Pepper Prawns

Ingredients

  • 300 g prawns, cleaned and deveined
  • 25 g butter
  • Freshly cracked black pepper, to taste
  • Salt, to taste

Method

  1. Pat the cleaned prawns dry with a kitchen towel.
  2. Melt the butter in a pan over medium-low heat.
  3. Add the prawns, freshly cracked black pepper and salt. Toss until the prawns are evenly coated in the butter.
  4. Cover the pan and cook over low heat for 3–4 minutes.
  5. Remove the lid and increase the heat. Cook for another 1–2 minutes, tossing continuously, until the prawns turn opaque and the butter forms a light, glossy coating.
  6. Remove from the heat immediately and serve hot.

The magic of this recipe lies in its simplicity. Freshly cracked black pepper balances the richness of the butter without overpowering the natural sweetness of the prawns.

Tip

Do not overcook the prawns, or they will become rubbery. Remove them from the heat as soon as they turn opaque and curl into a loose C-shape.
