Avocado Tortilla

Ingredients

  • 30 g wheat flour
  • 30 g all-purpose flour
  • 50 g avocado
  • Cilantro, chopped
  • 5 g olive oil
  • Sea salt
  • Baking powder

Method

  1. Add the wheat flour, all-purpose flour, sea salt and baking powder to a large mixing bowl. Stir briefly until combined.
  2. In another large bowl, mash the avocado until completely smooth with no chunks remaining. Add the chopped cilantro and salt and mix well.
  3. Add the flour mixture little by little and mix well. Knead until a soft, smooth dough forms.
  4. Cover the dough and keep it aside for 15–30 minutes.
  5. Depending on the size of tortilla you prefer, divide the dough into equal portions.
  6. Roll each portion into a roughly shaped ball using your hands.
  7. Using a rolling pin or tortilla press, roll the dough into a tortilla.
  8. Heat a cast-iron skillet or heavy-bottomed sauté pan over medium-high heat.
  9. Place the tortilla onto the hot pan and cook for 30–60 seconds, until small bubbles begin to appear on the surface and/or golden spots develop underneath.
  10. Flip and cook the second side for around 30 seconds, or until it is also lightly golden.
  11. Fill the avocado tortilla with fresh vegetables and roll into a wrap.

Ipshita’s Note

Use a ripe avocado and mash it really well before making the dough. This helps give the tortilla a smoother texture and an even green colour. Avoid overcooking it—the tortilla should remain soft enough to fold easily around the filling.
