Ingredients
- 200 g chicken
- 100 g broccoli, chopped
- 1 egg
- 20 g cheese
- 5 g ghee, divided
- Garlic
- Green chilli
- Coriander leaves
- Red chilli powder
- Garam masala
- Salt
- Black pepper
- Lemon juice
- Chilli flakes
- Chutney, to serve
Method
- Place the chicken and chopped broccoli in a bowl.
- Add the garam masala, red chilli powder, salt, black pepper, lemon juice and 3 g ghee. Mix everything well.
- Transfer the mixture to the air fryer and cook at 180°C for 15 minutes. Once cooked, allow the chicken and broccoli to cool.
- Place the garlic, green chilli, coriander leaves, chilli flakes, air-fried chicken and broccoli in a blender.
- Pulse until the ingredients are finely minced.
- Add the egg and cheese. Pulse again just until everything is combined. Add more salt only if required.
- Divide the mixture into equal portions and roll them into balls. Gently flatten each portion between your palms to form round kababs.
- Heat the remaining 2 g ghee in a pan.
- Add the kababs and cook until golden brown on both sides.
- Serve hot with chutney.
Ippitizer’s Note
Allow the air-fried chicken and broccoli to cool before blending. Pulse only until the ingredients are finely minced; over-blending can make the kabab mixture pasty. Turn the kababs only after the first side has developed a golden crust.
