Citrus Paneer Pop

A refreshing salad with juicy orange, crisp vegetables, soft paneer and a creamy citrus-yogurt dressing. Fresh, colourful and full of contrast, it brings together sweet, tangy, creamy and lightly spicy flavours in one bowl.

Ingredients

  • 50 g paneer, cubed
  • 50 g bell pepper, chopped
  • 50 g tomato, chopped
  • 100 g mixed lettuce
  • 150 g orange
  • 50 g yogurt
  • Oregano
  • Chilli flakes
  • Black pepper
  • Salt
  • Sweetener
  • Paprika
  • Chopped chillies
  • Apple cider vinegar
  • Orange zest
  • 5 g olive oil
  • Spring onion, for garnish

Method

  1. Peel the orange and reserve some pieces for the salad.
  2. Squeeze enough orange juice from the remaining orange and keep it aside for the dressing.
  3. In a small bowl, combine the yogurt, orange juice, olive oil, apple cider vinegar, orange zest, oregano, chilli flakes, black pepper, paprika, salt, sweetener and chopped chillies.
  4. Mix well until the dressing is smooth and creamy.
  5. In a large bowl, add the lettuce, chopped bell pepper, tomato, orange pieces and paneer.
  6. Pour the orange-yogurt dressing over the salad and gently toss until everything is evenly coated.
  7. Garnish with chopped spring onion and serve immediately.

Ippitizer Note

For the best texture, add the dressing only just before serving so the lettuce stays crisp. The balance of fresh orange, creamy yogurt and a little spice is what gives this salad its bright citrus character.
