Three-Cheese Stuffed Mushrooms

Juicy button mushroom caps filled with colourful vegetables and three creamy cheeses, then air-fried until tender and beautifully golden. These make an easy appetiser, party snack or savoury side dish.

Ingredients

  • 250 g large button mushrooms
  • 5 g groundnut oil
  • 4 garlic cloves, finely chopped
  • 2 green chillies, finely chopped
  • 20 g onion, finely chopped
  • 20 g mixed red, yellow and green capsicum, finely chopped
  • 20 g sweet corn
  • 20 g spinach, finely chopped
  • Reserved mushroom stems, finely chopped
  • ½ teaspoon chilli flakes
  • ½ teaspoon oregano
  • Salt, to taste
  • 50 g mozzarella cheese
  • 50 g cheddar cheese
  • 25 g cream cheese
  • Fresh coriander, finely chopped, for garnishing

Method

  1. Prepare the mushrooms
    Wipe the mushrooms thoroughly with a damp paper towel. Do not rinse them, as mushrooms absorb water easily and may become soggy. Gently pull or snap out the stems and chop them finely.
  2. Prepare the filling
    In a bowl, combine the chopped mushroom stems, garlic, green chillies, onion, capsicum, sweet corn, spinach, cheddar cheese, cream cheese, chilli flakes, oregano and salt. Mix until evenly combined. Keep the mozzarella aside for topping.
  3. Fill the mushrooms
    Spoon approximately one tablespoon of filling into each mushroom cap. Top each one with mozzarella cheese.
  4. Prepare the air fryer
    Lightly grease the air-fryer basket with the groundnut oil or use perforated parchment paper.
  5. Air-fry
    Arrange the stuffed mushrooms in a single layer. Air-fry at 175–180°C for 10–12 minutes, or until the mushrooms are tender and the mozzarella is melted and golden.
  6. Garnish and serve
    Finish with finely chopped fresh coriander and serve immediately.

Ipshita’s Note

The combination of finely chopped vegetables and three cheeses creates a creamy, flavourful centre without overpowering the natural taste of the mushrooms. They are rich and satisfying while still feeling fresh and colourful.

Tip

Never soak the mushrooms or wash them under running water. Wiping them with a damp paper towel prevents them from absorbing excess moisture and becoming soggy in the air fryer.
