Broccoli with Paneer

Bright air-fried broccoli and soft paneer cubes come together with jalapeño, lemon, chilli flakes and oregano in this quick vegetarian meal. Fresh, herby and satisfying, it requires only a few everyday ingredients.

Ingredients

  • 150 g paneer
  • 100 g broccoli
  • 5 g butter
  • Lemon juice, according to taste
  • Salt, according to taste
  • Black pepper, according to taste
  • Chilli flakes, according to taste
  • Oregano, according to taste
  • Jalapeño slices, according to taste

Method

  1. Wash the broccoli thoroughly and separate it into evenly sized florets.
  2. Add the broccoli to a bowl with the butter, salt and black pepper. Toss until lightly coated.
  3. Transfer the broccoli to the air-fryer basket and cook at 180°C for 10 minutes. Shake the basket halfway through so it cooks evenly.
  4. Meanwhile, cut the paneer into medium-sized cubes.
  5. Place the paneer in a mixing bowl. Add the lemon juice, jalapeño slices, chilli flakes, oregano and a little salt.
  6. Once the broccoli is tender with lightly roasted edges, add it to the seasoned paneer.
  7. Toss everything together gently, taking care not to crumble the paneer.
  8. Serve immediately while the broccoli is still warm.

Ipshita’s Note

Keep the broccoli bright and slightly firm rather than cooking it until completely soft. Tossing the hot broccoli with the seasoned paneer helps the flavours come together without requiring a heavy sauce.

Tips

  • Cut the broccoli into similar-sized florets for even cooking.
  • Add the lemon juice gradually so it doesn’t overpower the paneer.
  • Shake the air-fryer basket after approximately five minutes.
  • Toss gently to keep the paneer cubes intact.
