Lemon & Herb Grilled Chicken

Ingredients

For the Chicken

  • Chicken breast, boneless — 120 g
  • Lemon juice — 1 tsp
  • Dried oregano — ½ tsp
  • Dried basil — ½ tsp
  • Dried rosemary — ¼ tsp
  • Garlic powder — ¼ tsp
  • Salt — to taste
  • Black pepper, crushed — to taste
  • Olive oil — ½ tsp

For the Salad

  • Lettuce, chopped — 1 cup
  • Cherry tomatoes — 4–5
  • Cucumber — 4 slices
  • Red onion — 4–5 rings
  • Yellow bell pepper — ½, sliced
  • Black olives — 3–4
  • Olive oil — ½ tsp
  • Lemon juice — ½ tsp
  • Salt & pepper — to taste

To Serve

  • Baguette bread — 2 slices
  • Fresh herbs — optional, for garnish

Method

1. Prepare the Chicken
In a bowl, combine the lemon juice, oregano, basil, rosemary, garlic powder, salt, pepper and olive oil. Add the chicken breast and coat well.

2. Marinate
Cover and marinate for 30 minutes.

3. Grill the Chicken
Heat a grill pan. Cook the chicken over medium heat for 6–7 minutes on each side, or until fully cooked. The internal temperature should reach 75°C.

4. Rest & Slice
Remove from the heat and allow the chicken to rest for 2–3 minutes. Slice into strips.

5. Prepare the Salad
Combine all the salad ingredients in a bowl. Drizzle with olive oil and lemon juice. Season with salt and pepper, then toss well.

6. Assemble
Arrange the salad on a plate. Place the grilled chicken slices alongside or over the salad and serve with toasted baguette slices.
