Ingredients

For the Dough

  • 100 g almond flour
  • 150 g mozzarella cheese
  • 1 egg
  • 1 tsp baking powder
  • Salt — to taste

For the Topping

  • 50 g mozzarella cheese
  • 25 g bell pepper
  • 25 g onion
  • 25 g mushroom
  • 50 g tomato
  • Pizza sauce — as required
  • Jalapeño — to taste
  • Oregano — to taste
  • Chilli flakes — to taste

Method

1. Melt the Mozzarella

Place 150 g mozzarella in a microwave-safe bowl.

Microwave for 30 seconds, remove and mix well with a spatula.

Return it to the microwave for another 30 seconds.

Remove and stir again until the mozzarella is soft and evenly melted.

Add the egg and mix thoroughly.

2. Prepare the Dry Ingredients

In a separate bowl, combine the almond flour, baking powder and salt.

Mix well.

3. Make the Dough

Gradually add the almond flour mixture to the warm mozzarella-and-egg mixture, mixing continuously.

Once everything comes together, use your hands to form a dough.

Do not knead for more than a couple of minutes.

Wrap the dough in cling film and refrigerate until it firms up enough to roll comfortably.

4. Prepare the Toppings

While the dough chills, chop the bell pepper, onion, mushroom and tomato.

Keep the remaining mozzarella, jalapeño and pizza sauce ready.

5. Roll the Pizza Base

Line a baking tray with baking paper or a silicone mat.

Remove the dough from the refrigerator and knead it briefly for just a few seconds.

Place it on the prepared tray and gently press it down.

Cover the dough with another sheet of baking paper or silicone mat and roll it gently into a large pizza base.

Avoid making the crust too thin.

6. Add the Toppings

Remove the upper sheet of baking paper.

Spread pizza sauce evenly over the base.

Add the remaining 50 g mozzarella, followed by bell pepper, onion, mushroom, tomato and jalapeño.

7. Bake

Preheat the oven to 350°F / 175°C.

Bake the pizza for approximately 10 minutes, or until the cheese is melted and the crust is cooked through and lightly golden.

8. Finish & Serve

Remove the pizza from the oven and transfer it to a serving board.

Sprinkle with oregano and chilli flakes.

Slice into 3 portions and serve hot.

Ippitizer Tips

Don’t over-knead the dough. Once the cheese, egg and almond flour have come together, prolonged kneading isn’t necessary.

Roll gently. The dough behaves differently from regular wheat pizza dough, so light handling gives a better texture.

Keep some thickness in the crust. Rolling it too thin can make the base dry.

Watch the baking time. Almond flour and cheese can brown quickly, so start checking around the 8-minute mark.

Keep the toppings balanced. The base is already rich, so the vegetables and jalapeño help cut through the cheese.

Ippitizer Note

Pizza Suprème isn’t about making pizza as low-calorie as possible.

It is about creating a different kind of homemade pizza — one built around almond flour, egg and mozzarella, with plenty of vegetables and clearly defined portions.

Divided into 3 servings, each portion comes to approximately 415 kcal with 26 g protein, making it much easier to fit into a balanced meal while still feeling like proper pizza.
