Ingredients

  • 30 g muesli
  • 50 g blueberries
  • 50 g raspberries
  • 50 g Greek yogurt
  • 50 g curd
  • Sweetener, optional and to taste

Method

  1. Mix the Greek yogurt and curd until smooth and creamy. Add sweetener if desired.
  2. Spoon a small amount of muesli into the bottom of a clear serving glass.
  3. Add a layer of the yogurt mixture, followed by some blueberries and raspberries.
  4. Repeat the muesli, yogurt and berry layers until the glass is filled.
  5. Finish with the remaining berries and a light sprinkling of muesli.
  6. Serve immediately for maximum crunch or chill briefly before serving.

Ipshita’s Note

Keep the yogurt mixture thick so the layers remain clearly defined. If preparing the parfait in advance, reserve the final muesli layer and add it immediately before serving so it stays crisp.

Tips

  • Pat the berries dry before assembling the parfait.
  • Use a clear glass to display the colourful layers.
  • Do not prepare it too far in advance, as the muesli will soften.
  • Keep the final berry garnish simple for a clean presentation.
