Ingredients
* Buns — 2
* Paneer — 100 g
* Chopped onion — 39 g
* Chopped tomato — 30 g, seeds removed
* Chopped bell pepper — 30 g
* Peri peri masala — as required
* Salt — to taste
* Lettuce — as required
Method
1. Prepare the Paneer Filling
Place a wok over low heat and add the paneer. Toss gently.
Once the paneer begins to release some moisture and fat, add the peri peri masala and toss until the paneer is well coated on all sides.
Add the chopped onion, tomato and bell pepper. Toss everything together and season with salt to taste.
Cook briefly until everything is well combined, then switch off the heat and allow the mixture to cool slightly.
2. Assemble the Burgers
Cut the sesame buns open.
Place lettuce on the bottom half of each bun, then divide the peri peri paneer and vegetable mixture between the two burgers.
Close with the top buns and serve immediately.

Tip
Remove the tomato seeds before chopping so the filling doesn’t become watery and make the buns soggy.
