Add apple cider vinegar, lemon juice, salt and sweetener to taste, then blend until smooth.<\/li>\n\n\n\n<li>Strain the sauce through a sieve and keep aside. If red jalape\u00f1o is unavailable, dry red chillies can be used instead.<\/li>\n\n\n\n<li>Heat the groundnut oil in a wok. Add garlic and saut\u00e9 until lightly golden.<\/li>\n\n\n\n<li>Add the deseeded dry red chillies and saut\u00e9 briefly.<\/li>\n\n\n\n<li>Add the cauliflower, carrot and mushroom. Stir-fry for about a minute.<\/li>\n\n\n\n<li>Add the soya sauce and prepared hot garlic sauce. Mix well and saut\u00e9 for another couple of minutes.<\/li>\n\n\n\n<li>Add water and salt, then bring the mixture to a boil.<\/li>\n\n\n\n<li>Once it starts boiling, add the beans, onion and bell peppers. Cook for 3\u20134 minutes, keeping the vegetables slightly crisp.<\/li>\n\n\n\n<li>In a small bowl, mix the corn flour with 4\u20135 tablespoons of water to make a smooth slurry.<\/li>\n\n\n\n<li>Gradually add the corn flour slurry to the wok and stir until the sauce reaches your preferred consistency.<\/li>\n\n\n\n<li>Switch off the heat and transfer to a serving bowl.<\/li>\n\n\n\n<li>Finish with gingelly oil and garnish with spring onion. Add coriander leaves if desired.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ippitizer Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Keep the vegetables slightly crisp rather than overcooking them. That gives the dish better texture and keeps the hot garlic sauce from becoming too heavy.
