The beetroot gives the sauce its vivid colour, while tomato, whole spices, cream and butter round it out into something rich, smooth and slightly tangy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The visual inspiration for this dish came from a recipe picture shared by <strong>Chef Vikas Khanna<\/strong>. Prepare the Beetroot Base<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the beetroot, tomato, ginger, garlic, onion and green chillies to a pressure cooker.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add approximately <strong>\u00bd cup water<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Close the lid and pressure cook for <strong>3\u20134 whistles on high heat<\/strong>, followed by <strong>2 whistles on low heat<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Allow the pressure to release naturally.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let the cooked mixture cool.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Blend everything into a smooth paste, then strain it to remove tomato skin, seeds and any coarse fibres.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Make the Beetroot Makhni<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the <strong>ghee and 5 g butter<\/strong> in a broad pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cumin seeds and allow them to crackle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the ginger paste and garlic paste and saut\u00e9 briefly over medium heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour in the strained beetroot mixture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for approximately <strong>8\u20139 minutes<\/strong>, stirring occasionally, until excess water reduces and the gravy begins to thicken.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>turmeric<\/li>\n\n\n\n<li>cumin powder<\/li>\n\n\n\n<li>coriander powder<\/li>\n\n\n\n<li>red chilli powder<\/li>\n\n\n\n<li>garam masala<\/li>\n\n\n\n<li>salt<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Cook over low heat until the spices are well incorporated.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cream and simmer for another few minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The finished gravy should be <strong>smooth, creamy and pourable rather than thick or lumpy<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Make the Lemon-Butter Glaze<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a small pan, melt the remaining <strong>5 g butter<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add a few drops of lemon juice and warm briefly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Keep aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Prepare the Paneer<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Crumble or mash the paneer until fairly smooth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with salt and black pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Divide into <strong>3 equal portions<\/strong> and shape each portion into a round.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wrap each paneer round with <strong>2 spinach leaves<\/strong>, gently pressing the leaves around the outside to hold the shape.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Plate &amp; Finish<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spread the smooth beetroot makhni evenly over the serving plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Arrange the <strong>3 spinach-wrapped paneer rounds<\/strong> on top.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Brush or spoon over a little of the lemon-butter glaze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finish with fresh coriander and lemon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve warm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ippitizer Tips<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the smoothest beetroot makhni, <strong>blend and strain the gravy thoroughly<\/strong>. The sauce should look silky, not coarse.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook the beetroot mixture long enough to remove excess water before adding the cream.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you add extra cashew or cream, expect the beetroot makhni to become <strong>slightly lighter in colour<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Keep the paneer soft.
