Prepare the Chickpeas<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Soak the chickpeas overnight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The next day, boil them until cooked, then drain and transfer to a bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add salt, red chilli powder, roasted jeera powder, chopped green chilli, chopped coriander and lemon juice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix well and keep aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Prepare the Potato Mixture<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Boil the potatoes only until cooked through.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Do not overcook them \u2014 they should remain firm rather than becoming waterlogged or mushy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cool completely, peel and grate or mash until smooth with no large pieces remaining.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with salt and black pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Divide the potato mixture into <strong>3 equal portions<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Stuff the Tikkis<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Take one portion of the potato mixture and flatten it gently in your palm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place some of the seasoned chickpeas in the centre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bring the potato mixture up around the filling and seal it completely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Shape gently into a thick tikki.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Repeat with the remaining potato mixture and filling.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Air Fry<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preheat the air fryer at <strong>180\u00b0C for 10 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place the tikkis in the air-fryer basket, leaving a little space between them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Air fry at <strong>180\u00b0C for approximately 20\u201325 minutes<\/strong>, turning if required, until the outside becomes nicely golden.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No oil is required.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Assemble &amp; Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spread the remaining seasoned chickpeas onto the serving plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place the air-fried tikkis on top.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finish each tikki with:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>yogurt<\/li>\n\n\n\n<li>meethi chutney<\/li>\n\n\n\n<li>chopped onion<\/li>\n\n\n\n<li>tomato<\/li>\n\n\n\n<li>coriander leaves<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Serve immediately while the tikkis are still warm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ippitizer Tips<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Don\u2019t overboil the potatoes.<\/strong> Excess moisture makes the mixture difficult to shape and can cause the tikkis to soften too much.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let the potatoes <strong>cool completely<\/strong> before shaping.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Keep the chickpea filling relatively dry so it doesn\u2019t break through the potato shell.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For better browning, leave enough space around each tikki in the air fryer instead of overcrowding the basket.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the yogurt and chutney only at serving time so the outside stays golden rather than turning soggy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ippitizer Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Traditional aloo tikki is usually pan-fried or deep-fried, but I wanted the same comforting potato-and-chaat experience without adding oil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The chickpea centre makes the tikki more interesting than a plain potato patty, while the yogurt, meethi chutney, onion and coriander bring back that familiar sweet, tangy and spicy chaat finish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Same idea, different cooking method \u2014 and still unmistakably aloo tikki.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Zero-oil air-fried aloo tikki stuffed with a tangy chickpea filling This is my version of aloo tikki \u2014 made without oil and cooked in the air fryer instead of shallow or deep frying.
