Soak the Rice

Wash the rice and soak it in water for 30 minutes.

Drain and keep aside.

2. Start the Pulao

Heat 10 g ghee in a pot.

Add the cardamom, cloves, black peppercorns and cinnamon.

Sauté for a few seconds until aromatic.

If you prefer a slightly spicy pulao, add the optional green chilli.

Add a pinch of turmeric and red chilli powder and sauté briefly.

Immediately add water and bring it to a boil.

Add the soaked rice, salt, fresh orange juice and sweetener.

Mix gently and allow the rice to cook.

3. Prepare the Saffron Milk

Meanwhile, heat the remaining 5 g ghee in a small pan.

Add a pinch of turmeric and sauté briefly.

Pour in the milk and bring it just to a boil.

Add the saffron strands, then switch off the heat.

Keep aside to infuse.

4. Finish the Rice

Once the rice is cooked, pour the saffron milk mixture into it.

Mix gently.

Simmer for another few minutes so the rice absorbs the milk, saffron and remaining flavour.

Avoid overcooking at this stage so the rice grains remain separate.

5. Serve

Serve Narangi Pulao warm.

It can be paired with chutney, raita or a light curry.

For presentation, you can spoon the pulao into hollowed orange halves and serve with fresh orange segments alongside.

Ippitizer Tips

Use fresh orange juice rather than packaged juice for the cleanest citrus flavour.

Add the orange juice carefully and avoid prolonged cooking after it goes in, otherwise the fresh citrus character can become muted.

The green chilli is optional. Leave it out if you want the pulao to lean more towards fragrant and mildly sweet.

Add the saffron milk only after the rice is nearly cooked so its aroma stays noticeable.

Ippitizer Note

The orange juice gives this pulao its gentle sweetness and distinctive citrus aroma, while the whole spices and saffron milk bring warmth and depth.

It is one of those dishes where sweet and savoury sit together rather than competing — bright from the orange, fragrant from the spices, and rich enough to still feel festive.

Fragrant, Citrusy & Festive Narangi pulao is a fragrant, citrus-infused rice dish made with fresh orange juice, aromatic whole spices, saffron, and nuts.
