Cook &amp; Cool the Rice<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook the rice in advance.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once cooked, spread it out and allow it to cool for at least <strong>20\u201330 minutes<\/strong> before using. This helps the grains stay separate while stir-frying.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Marinate &amp; Cook the Chicken<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut the chicken into cubes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with lemon juice, salt, pepper and paprika.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave to marinate for at least <strong>15 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat <strong>5 g ghee<\/strong> in a medium skillet over medium heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chicken and cook for approximately <strong>8\u201310 minutes<\/strong>, or until completely cooked through with no pink remaining.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the chicken along with any juices from the pan and keep aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Cook the Vegetables &amp; Pineapple<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large skillet, heat another <strong>5 g ghee<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped onion, garlic and bell pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saut\u00e9 for around <strong>3 minutes<\/strong>, or until the onion becomes translucent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the fresh pineapple cubes and soy sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for another <strong>5\u20138 minutes<\/strong>, until the pineapple begins to soften slightly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped cabbage and chilli and cook briefly so the vegetables retain some texture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Add Rice &amp; Chicken<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cooled rice, cooked chicken with its juices and half of the spring onion.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix everything gently and cook for approximately <strong>5 minutes<\/strong>, allowing all the flavours to come together.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Roast the Cashews<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the remaining <strong>5 g ghee<\/strong> in a small skillet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cashews and roast until lightly golden.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Allow them to cool slightly, then roughly chop.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>6. Finish &amp; Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the rice from the heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Top with the remaining spring onion and roasted cashews.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spoon the Chicken Pineapple Rice into the hollowed pineapple shells and serve hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cool the cooked rice properly before stir-frying.
