Prepare the Watermelon Rind<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peel off the thick outer green skin of the watermelon using a vegetable peeler.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peel away another thin layer just beneath the green skin so that you are left with the tender white rind.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roughly chop the rind and transfer it to a grinder. Grind into a paste <strong>without adding any water<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Roast the Suji &amp; Besan<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat a pan and melt the ghee.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the suji and besan and cook over low heat, stirring continuously, until they become lightly browned and aromatic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Cook the Watermelon Rind<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the watermelon rind paste to the roasted suji and besan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook over low to medium heat until the mixture thickens and the excess moisture reduces. This should take approximately <strong>15\u201320 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Sweeten &amp; Flavour<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add sweetener according to your taste and continue cooking for approximately <strong>10 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cardamom powder and nutmeg powder.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix the saffron into the milk, then add the saffron milk to the halwa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for another <strong>5 minutes<\/strong>, stirring until everything is well combined and the halwa reaches a soft, rich consistency.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Garnish &amp; Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove from the heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Garnish with sliced almonds and pistachios and serve warm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Do not add water while grinding the watermelon rind. The rind naturally contains plenty of moisture, and adding extra water will only increase the cooking time.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook the halwa patiently over low heat so the moisture evaporates gradually and the flavours develop properly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ipshita\u2019s Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Watermelon rind is something we usually throw away without giving it much thought.
