Soak &amp; Cook the Chickpeas<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wash the chickpeas and soak them overnight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The next day, transfer the soaked chickpeas to a pressure cooker and cook until soft. Drain if required and keep aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Prepare the Masala<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the groundnut oil in a wok.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped onion and cook until it starts to soften. Add the ginger paste and garlic paste and saut\u00e9 well.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped tomato and cook until it softens and everything begins to come together.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Add the Chickpeas &amp; Spices<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cooked chickpeas, chopped green chilli, turmeric powder, chilli powder, Kashmiri red chilli powder, cumin powder and salt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix well.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add a little water and continue cooking until the spices and chickpeas are well combined.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Mash the Chickpeas<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for another couple of minutes, then lightly mash the chickpeas with a masher.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The texture should remain slightly rustic rather than becoming completely smooth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add a little more water if required and cook for another <strong>3\u20134 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix everything together well and switch off the heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Transfer the Chole Ka Bharta to a serving bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Garnish lightly with coriander leaves and serve hot with roti or paratha.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mash the chickpeas only lightly so the bharta keeps some texture. Add water gradually while cooking rather than adding too much at once.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ipshita\u2019s Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I like this bharta slightly rustic rather than completely smooth.
