Prepare the Radish<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix the grated radish with a little salt and leave it aside for approximately <strong>5 minutes<\/strong>. This will help the radish release its moisture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Squeeze the radish well to remove as much excess moisture as possible. Keep aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Prepare the Dough<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the maize flour, salt, squeezed radish and ajwain to a mixing bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix well, then gradually add lukewarm water and bring everything together to form a soft dough.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover and allow the dough to rest for <strong>10\u201315 minutes<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Shape the Mini Rotis<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After resting, knead the dough once again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Divide and roll into semi-thick rotis. For this presentation, make them small \u2014 approximately canap\u00e9 size.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Because makki dough can be delicate to handle, rolling it between sheets of foil or on a silicone mat makes the process easier.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Cook the Rotis<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat a tawa until hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place the rotis on the tawa and cook on both sides until brown spots begin to appear.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lightly brush with the ghee and cook again on both sides until properly cooked and lightly golden.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Assemble &amp; Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Arrange the mini makki rotis on a serving platter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Top each one with <strong>sarson da saag<\/strong> and finish with a small dollop of <strong>hung curd<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve hot with salad and lemon on the side.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Squeeze the grated radish thoroughly before adding it to the maize flour. Too much moisture can make makki dough difficult to handle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If the dough feels fragile while rolling, use foil or a silicone mat rather than adding too much extra flour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ipshita\u2019s Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Makki di roti with sarson da saag is traditional Punjabi comfort food, but traditional food doesn\u2019t always have to be presented traditionally.
