Prepare the Kadhi<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large bowl, add <strong>200 g yogurt<\/strong>, water and salt to taste. Whisk thoroughly until smooth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add red chilli powder, turmeric powder and <strong>15 g besan<\/strong>. Whisk again until completely smooth and free of lumps.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Transfer the mixture to a kadai and cook over medium heat, stirring slowly and continuously.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Prepare the Dapka Batter<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In another bowl, combine the remaining <strong>30 g besan<\/strong> with <strong>15 g yogurt<\/strong>, groundnut oil, ajwain, hing, turmeric powder, red chilli powder, coriander leaves and salt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add water as required and mix into a semi-thick batter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Cook the Dapkas in the Kadhi<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once the kadhi begins to boil, form small portions of the batter and gently drop them directly into the simmering kadhi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook over medium heat until the dapkas are cooked through and begin to float to the surface.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4. Prepare the Tadka<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the ghee in a small pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once melted, add methi, dry red chilli and crushed coriander seeds. Allow them to splutter and become aromatic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the prepared tadka over the kadhi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Continue cooking until the kadhi reaches your preferred thickness.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5. Finish &amp; Serve<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Switch off the heat and garnish with fresh coriander leaves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve hot with steamed rice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ipshita\u2019s Note<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What I like about this version is that the dapkas cook directly in the kadhi instead of being fried separately. They become soft and soak up the flavours of the yogurt gravy, while the final tadka brings everything together.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Whisk the yogurt, besan and water thoroughly before cooking so there are no lumps. Once it goes onto the heat, keep stirring until the kadhi begins to simmer.
